Coral Leaf, Stone Fruit & Herb Salad with Feta & Honey Dressing
A juicy, herby, sweet-and-salty summer salad that’s as beautiful as it is fresh. Featuring Windy Hills coral leaves, soft herbs, and seasonal stone fruit, it’s sunshine in a bowl.
Shopping List
1 head Windy Hills Windy Hills Green or Red Coral Lettuce, washed & torn
A handful of Windy Hills Mint leaves, torn
A handful of Windy Hills Flat Leaf Parsley, roughly chopped
2–3 ripe Stone Fruits (peaches, nectarines or plums), sliced
Pantry CHECK
100g Feta, crumbled
2 tbsp Honey
1½ tbsp Sherry vinegar or lemon juice
¼ cup Olive oil
Salt & black pepper
METHOD
Make the dressing: In a small jar, whisk or shake together honey, Sherry vinegar, olive oil, salt and pepper until emulsified.
Assemble the salad: In a large serving bowl or platter, layer coral lettuce, stone fruit slices, herbs and crumbled feta. Grill the stone fruit for an extra layer of flavour!
Dress and serve: Drizzle over the honey dressing just before serving. Toss gently or leave layered for visual impact.
TOP TIP
Add toasted almonds or walnuts for extra crunch, or swap feta for burrata if you’re feeling fancy.
