Half Cos Salad

Attitude-filled Half Cos Salad with a delicious turmeric/tahini dressing.

Vibrant parsley and fresh Half Cos, layered with salsa and dressed with our tahini dressing for the perfect dish. Colourful, bright, nutrient-dense and packed with flavour.

INGREDIENT List

¼ cup tahini

juice of 2-3 small lemons

1/2 tsp pink Himalayan salt

at least 1/2 cup water, to thin

¼ tsp turmeric powder

4 tomato’s

100ml olive oil

salt & pepper

2 baby cos salads, cut in half

2 hard-boiled eggs

50g parmesan cheese

freshly picked parsley

1 avocado

METHOD

  1. To make lemon tahini dressing place tahini, lemon, salt and water in a bowl or blender and blend until smooth, season with salt, pepper and turmeric powder.

  2. Using a box grater, grate your tomatoes into a bowl, add olive oil season with salt and a generous amount of pepper.
