Layered Salad

Fresh and fragrant Basil. Guy combines basil, parmesan cheese, gorgeous pears and some prosciutto to create the perfect Baby Cos hand salad. Dressed with a lemon dressing.

Instructions for preparing a meal, including 10 minutes for prep, 10 minutes for cooking, serving 6 people.
Lettuce wraps filled with shredded cheese, ham, and fresh basil leaves, with a jar of olive oil and vinegar on a marble surface.

INGREDIENT List

3 tbsp lemon juice

250 ml olive oil

¼ tsp thyme leaves

2 baby cos, cut into ¼

1 pear, sliced fine

100g shaved parmesan, cheese

100g prosciutto

1 bunch basil

150g halloumi

3 eggs, hard-boiled

METHOD

  1. In a glass jar or mixing bowl mix together lemon, olive oil, thyme, salt and pepper.

  2. Gently separate the baby cos and alternately stuff sliced pear, parmesan, prosciutto and basil in between lettuce layers.

  3. Dress with lemon dressing then using a grater, grate halloumi and egg over the salad.
