Shopping List

2 cups Cherry Tomatoes, halved

1 ball Burrata Cheese

1 handful Windy Hills Basil

Pantry CHECK

Extra virgin Olive Oil

Balsamic Glaze or Aged Balsamic Vinegar

Sea Salt & Cracked Black Pepper

Optional: Crusty Sourdough or
Grilled Ciabatta

METHOD

  1. Slice cherry tomatoes in half and scatter across a large serving plate.

  2. Tear or arrange fresh basil leaves throughout the tomatoes.

  3. Place the burrata gently in the centre of the plate.

  4. Drizzle generously with olive oil, a few drops of balsamic glaze, and season well with salt and cracked pepper.

  5. Serve immediately with crusty bread to scoop up all the juices.

TOP TIP

Basil bruises easily - always tear, never chop. Tearing preserves the oils and avoids that black-edge look on leaves. For peak freshness, add basil just before serving.
