Chicken Cutlets in Herby Tomato Sauce
A comforting pan dish of golden chicken cutlets simmered in a rich tomato sauce with garlic, sweet paprika and fresh Windy Hills herbs. Simple, rustic cooking made for the family table.
Shopping List
Small handful Basil, leaves picked
Small handful Flat-Leaf Parsley, roughly chopped
3 Tomatoes
4 Chicken Cutlets
Pantry CHECK
1 Onion, finely sliced
1 can Tinned Cherry Tomatoes (400g)
2 Garlic Cloves, minced
1 tsp Sweet Paprika
1 tsp Sugar
2 tbsp Olive Oil
Salt & Cracked Black Pepper
METHOD
Brown the chicken
Heat olive oil in a large pan over medium heat. Season chicken cutlets with salt and pepper and cook for 4–5 minutes per side until golden. Remove and set aside.Cook the base
In the same pan, add sliced onion and cook gently for 5 minutes until soft. Stir in garlic and paprika and cook for another minute until fragrant.Add the tomatoes
Add the tinned cherry tomatoes, fresh cherry tomatoes, sugar and thyme. Stir well and bring to a gentle simmer.Return the chicken
Place the chicken cutlets back into the pan, spooning the sauce over the top. Cover and simmer for 15–18 minutes until the chicken is cooked through.Finish and serve
Scatter with fresh basil, parsley and a drizzle of olive oil before serving.
TOP TIP
Serve with crusty bread, pasta or soft polenta to soak up the rich tomato and herb sauce.
